Chicken with oyster mushrooms

Preparation time:  cca. 20 minutes (plus frying time)
Per portion: cca. 270 kcal / 1134 kJ
36 g P, 7 g F, 13 g CH


  • 500 g chicken breasts
  • 400 g sugar snap peas
  • 400 g carrots
  • 150 g oyster mushrooms
  • 4 tbsp oil
  • 200 ml vegetable stock
  • 2 tbsp soy sauce
  • salt
  • pepper


  1. Rinse and pat dry the chicken breasts and cut into strips. Trim, rinse and dry the sugar snap peas. Peel the carrots and cut into slices. Trim the oyster mushrooms, wipe with a damp cloth and cut into small pieces.
  2. Fry the chicken strips on all sides in the hot oil. Add the sugar snap peas, carrots and mushrooms, and cook for 2 minutes. Add the stock, cover and simmer for cca. 8 minutes. Add salt, pepper and soy sauce to taste. Serve with rice.
