Chili Avocado Mash on Rye

INGREDIENTS (Serves 4)

  • 2 ripe avocados, peeled, pitted and chopped
  • 2 spring onions, chopped
  • 1 garlic clove, crushed
  • ½ tsp sea salt
  • 1 tsp dried chili flakes
  • Juice of 1 lime
  • 4 slices of rye bread
  • 4 tbsp coconut oil
  • Freshly ground black pepper

PREPARATION

  1. Mix the ripe avocados, garlic, spring onions, sea salt, chili flakes and lime juice in a small bowl and mash well using a fork.
  2. Toast the rye bread and, while it is still warm, spread each piece with one tablespoon of coconut oil.
  3. Spoon the avocado mash evenly on each piece of toast and season with black pepper to taste.
