- 100 g dried figs
- 175 g oats
- 75 g brown sugar
- 1 tsp cinnamon
- 150 g currants
- 2 tbsp malt extract
- 300 ml unsweetened apple juice
- 175 g wholemeal flour
- 3 tsp baking powder
- oil for the dish
- Chop the dried figs and combine with the oats, brown sugar, cinnamon, currants and malt extract. Stir in the unsweetened apple juice.
- Sift over the wholemeal flour and baking powder, and knead to make a smooth dough. Preheat the oven to 180 °C (Gas Mark 4).
- Put the dough in a greased loaf tin. Smooth the surface, and bake in the oven for about 1½ hours. Turn out on a rack. Leave to cool, then slice. Serve with fruit spread.
