Gluten Free Teff Bread

Makes 1 loaf for around 15 slices


Gluten Free Teff Bread

1 packet yeast

1.5 cups water

1.5 cups teff flour

3/4 cups sorghum flour

1/2 cup tapioca flour

1/2 cup potato starch

1 1/2 tsp xanthan gum

1 1/2 tsp sea salt

3 tbsp ground flax seed

1/4 cup coconut oil

1 tbsp apple cider vinegar

2 tbsp maple syrup



1 Combine 1 packet of yeast and 1.5 cups of lukewarm water and mix well. Leave to rest for a couple of minutes.

2 Sift together all types of flour, potato starch, xanthan gum and sea salt.

3 In a large bowl combine the flax with the coconut oil, apple cider vinegar and maple syrup, whisk well. Add the yeast mixture, then gradually stir in the flour mixture until smooth. Grease a bread tin and pour the mixture into it. Cover the tin with a moist cloth and place in a warm place to rise for around 60 minutes.

4 Preheat the oven to 375°F/190 °C. Put the bread tin in the oven and bake for 55-60 minutes.

5 Remove the tin from the oven, set aside to cool. Gluten free teff bread tastes best warm or at room temperature.
