INGREDIENTS (Serves 4)
- 500 g potatoes
- 2 eggs
- 4 tbsp flour
- 2 tsp cornstarch
- 50 g butter
- Peel the potatoes and cut into dices, then cook in boiling salted water for 10 minutes. Drain and leave until no longer steaming, then puree with the eggs, flour and cornstarch.
- Add salt, pepper and nutmeg to taste. With floured hands, shape the mixture into noodles the length and thickness of a finger, then boil in simmering salted water for 5 minutes until they float to the top.
- Remove the cooked noodles with a slotted spoon, drain, and fry in the melted butter until golden. The dish goes well with a salad or sauerkraut.
