INGREDIENTS (Serves 4)
- 1 onion
- 1 tbsp butter
- 200 g long grain rice
- ¼ tsp ground saffron
- 1 tsp salt
- 4 halibut steaks (150 g each)
- 2 tbsp lemon juice
- 2 tbsp oil
- herb butter to serve
- Peel and chop the onion. Melt the butter in a pan and sauté the onion. Add the long grain rice, ground saffron, salt and 400 ml of water. Cook for cca. 20 minutes.
- Rinse and pat dry the halibut steaks and sprinkle over the lemon juice. Heat the oil in a pan and cook the fish for 4 minutes on both sides. Sprinkle with salt and pepper to taste. Serve with the saffron rice and herb butter.
