- 2 eggs
- 125 g flour
- 250 skimmed milk
- 1 tbsp sugar
- ½ sachet vanilla sugar
- 75 g chopped pistachios
- pinch of salt
- 2–3 tbsp butter
- maple syrup for brushing
- chopped pistachios to garnish
- Separate the eggs. Stir together the flour, egg yolks, milk, sugar, vanilla sugar and chopped pistachios until smooth. Cover and leave the mix for 20 minutes.
- Whisk together the egg white and a pinch of salt until stiff, and fold into the mix. Melt 2–3 tablespoons of butter in a pan and cook 8 thin crepes. Brush the cooked crepes with maple syrup and garnish with chopped pistachios to serve.
