Pancakes with pistachios and maple syrup


Preparation time: 25 minutes (plus resting and baking time)
Per portion approx. 175 kcal / 735 kJ
6 g P, 9 g F, 15 g CH
Serves 4

  • 2 eggs
  • 125 g flour
  • 250 skimmed milk
  • 1 tbsp sugar
  • ½ sachet vanilla sugar
  • 75 g chopped pistachios
  • pinch of salt
  • 2–3 tbsp butter
  • maple syrup for brushing
  • chopped pistachios to garnish
  1. Separate the eggs. Stir together the flour, egg yolks, milk, sugar, vanilla sugar and chopped pistachios until smooth. Cover and leave the mix for 20 minutes.
  2. Whisk together the egg white and a pinch of salt until stiff, and fold into the mix. Melt 2–3 tablespoons of butter in a pan and cook 8 thin crepes. Brush the cooked crepes with maple syrup and garnish with chopped pistachios to serve.
