INGREDIENTS (Serves 4)
- 175 g spelt macaroni
- 250 g wild salmon fillet
- 2 tbsp lemon juice
- 1 tbsp butter
- 1 shallot
- 200 ml cream
- bunch of rocket
- 50 g Parmesan
- Cook the spelt macaroni in boiling salted water following the packet instructions. Wash and pat dry the salmon fillet and slice into strips. Add salt, pepper, and lemon juice to taste.
- Melt the butter in a pan. Peel and chop the shallot, then sauté. Drain the pasta, then stir with the shallot. Mix with the cream and fold in the smoked salmon. Simmer over a low heat for 5 minutes. Add salt and pepper to taste.
- Rinse, spin dry and trim the rocket. Grate the Parmesan. Divide the pasta into servings and decorate with rocket and Parmesan.
