INGREDIENTS

CHICKEN CACCIATORE
Nutrition per serving:
500 calories, 80g protein, 29g carbs, 9g fat

4 8-oz chicken breasts, diced into cubes

1 cup onion, diced

1 cup green pepper, diced

3 cups mushrooms, sliced

1 28-oz can diced tomatoes

1 14-oz can tomato sauce

1 4.5-oz can tomato paste

11⁄2 tsp basil

11⁄2 tsp oregano

2 cloves garlic, minced

PREPARATION

  1. Coat a deep skillet with spray and put over medium-high heat. Once the skillet is hot, add chicken and cook 15–20 minutes, stirring occasionally, until cooked through.
  2. Add in remaining ingredients and simmer for 1 hour.
