Refreshing Blueberry Soup

When a speed workout saps your energy, this purple blueberry soup energizes your body again. The yogurt gives you the dose of protein that your body needs to repair your hard-working muscles, while blueberries, rich in anti-inflammatory qualities, help relieve soreness. Serve the soup in a glass bowl or even a wide-mouthed jar so you can savor the color along with the flavor.

Serves 4

  • 2 cups fresh blueberries
  • 1 cup orange juice
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 cup vanilla yogurt (not Greek)

  1. Rinse blueberries and put 1½ cups of berries in a saucepan. Add orange juice, and mix in cinnamon to combine. Bring to a boil over medium heat. Lower heat and simmer for 10 minutes. Remove from heat and allow to cool for 15 minutes.
  2. Stir in salt. Pour the mixture into a blender to blend until smooth.
  3. Transfer into a bowl and allow to cool completely. Stir in yogurt and the rest of berries. Cover bowl and chill in fridge at least 2 hours or overnight.

VARIATION: For a tarter flavor, use plain yogurt instead of half of the vanilla yogurt.

GARNISHES: Thin orange slices or orange zest, or mint sprigs.
