Salad with mozzarella and avocado

  • 200 g mixed salad leaves, ready-to-use
  • 2 spring onions
  • 1 red pepper
  • 1 avocado
  • 4 diced tomatoes
  • lemon juice
  • 200 g mozzarella
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp freshly chopped basil
  • salt
  • pepper


  1. Wash and spin dry the salad leaves. Trim, wash and dry the spring onions, then slice into rings. Wash, dry, trim the pepper, remove seeds and cut into strips. Peel the avocado, then if desired, roast the avocado a bit. Remove the stone and cut the flesh into slices. Sprinkle with lemon juice, then mix with the other salad ingredients.
  2. Drain the mozzarella, then slice and add to the salad. Mix the balsamic vinegar, freshly chopped basil, salt and pepper, and pour over the salad. Serve.
