INGREDIENTS (Serves 4)
- 800 g salmon fillet
- 1 tbsp lemon juice
- bunch each of dill, chives and parsley
- 150 g crème fraîche
- 5 tbsp fish stock
- 2 tsp mustard
- Rinse and pat dry the salmon fillet and sprinkle over the lemon juice. Season with salt and pepper and put in an ovenproof dish. Pre-heat the oven to 200 °C (Gas Mark 6).
- Rinse the herbs, then shake dry and chop finely. Combine three-quarters of the herbs with the crème fraîche, stock and mustard, stir well, and pour over the fish. Bake the salmon in the oven for cca. 20 minutes. Sprinkle over the rest of the herbs and serve.
