Superfood Salad

INGREDIENTS (Serves 4)

  • 4 large handfuls of baby spinach
  • 1 head of broccoli, cut into small florets
  • 1 cooked beetroot, thinly sliced
  • 1 carrot, grated
  • 1 avocado, peeled, pitted and sliced
  • Small handful of fresh mint, roughly chopped
  • Large handful of blueberries
  • 1 tbsp flaxseeds
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds

For the dressing:

  • Large handful of blueberries
  • Juice of 1 lime
  • 2 tbsp apple cider vinegar
  • 1 tbsp raw honey
  • 1 tbsp olive oil
  • Sea salt and freshly ground black pepper

PREPARATION

    1. Lightly toss the spinach, broccoli, beetroot, carrot, avocado, mint and blueberries together in a bowl.
    2. Mix the dressing ingredients in a blender or food processor and blitz until smooth. Pour the dressing over the salad, then sprinkle with all the seeds. Season to taste and serve.
