Sweet potato pancakes are great for dessert and they are made of only five ingredients, all of which are good for you.
Sweet potato is an excellent ingredient: it adds wonderful flavor and holds the pancakes together. Try serving them with a strawberry jam, some apple purée and a few pieces of fresh fruit – this makes just an amazing combination.
Makes 12 pancakes
1 sweet potato
200ml oat milk
200g brown rice flour
2 tablespoons of honey
1 teaspoon of ground cinnamon
Coconut oil for greasing
1 Wash and peel the sweet potato, and cut into small pieces. You can boil or steam the sweet potato pieces for around 10 minutes, until really soft. Then put them into a blender, and add the oat milk, flour, honey and cinnamon. Blend for about 30 seconds until the mix is totally smooth.
2 Heat the coconut oil in a frying pan, the oil should get very hot, then add about tablespoons of the mixture. Using a spoon, shape the mixture into a circle and cook for 2-3 minutes, until the top of the pancake no longer looks runny and starts to firm. Turn it over, and cook on the other side for about a minute.
3 Following the same technique, make pancakes until you’ve used up all the mixture.
