Tender haddock fillets à l’orange

Preparation time:  cca. 10 minutes (plus resting and cooking time)
Per portion: cca. 382 kcal / 1604 kJ
30 g P, 20 g F, 19 g CH


  • 8 haddock fillets
  • salt
  • pepper
  • 2 tbsp lemon juice
  • 4 unwaxed oranges
  • 1 tsp dried oregano
  • 250 ml cream
  • 2 tsp cornstarch
  • oil for the dish


  1. Rinse and pat dry the haddock fillets and season with salt and pepper. Sprinkle over lemon juice. Wash the oranges in hot water, dry and grate 2 teaspoons of rind from 2 of the oranges and set aside. Squeeze the juice from these 2 oranges and sprinkle over the fish. Let to stand for 10 minutes.
  2. Pre-heat the oven to 200 °C (Gas Mark 6). Put the fish fillets in a greased gratin dish and sprinkle over the dried oregano. Peel the rest of the oranges, then cut into segments and arrange on the fish.
  3. Mix the cream, cornstarch and grated orange rind, then pour over the fish fillets and bake in the oven for cca. 15 minutes. The dish goes well with saffron rice.
