INGREDIENTS (Serves 4)
- 8 haddock fillets
- 2 tbsp lemon juice
- 4 unwaxed oranges
- 1 tsp dried oregano
- 250 ml cream
- 2 tsp cornstarch
- oil for the dish
- Rinse and pat dry the haddock fillets and season with salt and pepper. Sprinkle over lemon juice. Wash the oranges in hot water, dry and grate 2 teaspoons of rind from 2 of the oranges and set aside. Squeeze the juice from these 2 oranges and sprinkle over the fish. Let to stand for 10 minutes.
- Pre-heat the oven to 200 °C (Gas Mark 6). Put the fish fillets in a greased gratin dish and sprinkle over the dried oregano. Peel the rest of the oranges, then cut into segments and arrange on the fish.
- Mix the cream, cornstarch and grated orange rind, then pour over the fish fillets and bake in the oven for cca. 15 minutes. The dish goes well with saffron rice.
