- 400 g spinach
- 1 onion
- 3 tbsp vegetable oil
- 600 g smoked tofu
- 100 g breadcrumbs
- grated rind of 1 unwaxed lemon
- 50 g wheat flour
- 100 ml milk
- Pick over the spinach, then trim and wash. Cook in a saucepan, stirring, until wilted. Remove from the saucepan and drain well. Chop.
- Peel and chop the onion and sauté briefly in 1 tablespoon of hot oil. Stir in the spinach and sauté for cca. 5 minutes. Add salt, pepper, and nutmeg to taste.
- Heat the rest of the oil in a pan and fry the stuffed tofu schnitzels on both sides for cca. 2 minutes until crispy. Serve with tomato sauce.
