Tofu schnitzels with spinach


Preparation time: cca. 30 minutes (plus cooking and frying time)
Per portion cca. 410 kcal / 1722 kJ
30 g P, 17 g F, 31 g CH
Serves 4

  • 400 g spinach
  • 1 onion
  • 3 tbsp vegetable oil
  • salt
  • pepper
  • nutmeg
  • 600 g smoked tofu
  • 100 g breadcrumbs
  • grated rind of 1 unwaxed lemon
  • 50 g wheat flour
  • 100 ml milk
  1. Pick over the spinach, then trim and wash. Cook in a saucepan, stirring, until wilted. Remove from the saucepan and drain well. Chop.
  2. Peel and chop the onion and sauté briefly in 1 tablespoon of hot oil. Stir in the spinach and sauté for cca. 5 minutes. Add salt, pepper, and nutmeg to taste.
  3. Heat the rest of the oil in a pan and fry the stuffed tofu schnitzels on both sides for cca. 2 minutes until crispy. Serve with tomato sauce.
