Wholemeal cake with blackberries and apples

Preparation time: cca. 40 minutes (plus cooking, baking and cooling time)
Per portion: cca.  280 kcal / 1176 kJ

Makes cca. 10 slices

  • 350 g apples
  • 3 tbsp lemon juice
  • 300 g wholemeal wheat flour
  • 3½ tsp baking powder
  • 1 tsp ground cinnamon
  • 150 g sugar
  • 1 egg
  • 200 g low-fat cream cheese
  • 175 g blackberries
  • 60 g brown sugar cubes
  • oil for the dish
  1. Peel the apples, remove the seeds, and chop the flesh. Sprinkle with the lemon juice, then bring to the boil in a saucepan. Simmer, stirring frequently, for 10 minutes, then let to cool.
  2. Sift the flour, baking powder and cinnamon into a bowl, add sugar, and combine well. Stir in the egg, cream cheese and cooled cooked apples. Work into a smooth dough.
  3. Pre-heat the oven to 190 °C (Gas Mark 5). Pick over, rinse and carefully dry the blackberries. Fold 115 g prepared blackberries into the dough. Crush the sugar cubes with a rolling pin and sprinkle over a greased loaf tin. Arrange the rest of the blackberries in the tin, then pour in the dough and smooth the surface. Bake the wholemeal cake in the oven for cca. 45 minutes. Leave to cool before removing from the tin.
